Texas Sized Blueberry Muffins
These ridiculously moist and flavorful muffins are absolutely the best muffins in the world and abnormally easy to make, if you keep a box of Yellow Cake mix on hand

Texas Sized Blueberry Muffins
Serves: 12-24 | Prep Time: 10 min | Cook Time: 20 min
Ingredients
- 1 package Better Batter Yellow Cake Mix
- 1/4 c Better Batter Flour, any blend
- 1/2 tsp baking powder
- 3 eggs, beaten OR 1/2 c aquafaba
- 2/3 c regular or df milk
- 1/3 c oil
- 8 oz fresh blueberries
- granulated or baking sugar
Instructions
Preheat Oven to 350 degrees.
Prepare muffin tins. Line 12 jumbo muffin cups or 24 regular cupcake tins with paper liners. Set aside.
Beat wet ingredients together. Combine eggs pr aquafaba, milk and oil in a medium bowl. Beat until cohesive and thoroughly mixed. Set aside.
Whisk dry ingredients. Combine cake mix, flour and baking powder and whisk to combine.
Evenly divide batter into prepared tins. Sprinkle generously with sugar.
Place in oven and bake for 25 to 30 minutes, or until golden brown and springy when gently pressed with fingers. Remove from oven to a rack.
Allow to cool for at least 1/2 hour or until cool before serving.
