My neighbor cries with glee when I share this classic dessert on summer nights. These ice cream sandwiches are a delightful departure from the norm when you swap in Mexican chocolate for regular chocolate chips. Found in the International Food aisle (or online), Mexican chocolate has a hint of cinnamon which is delicious paired with vanilla ice cream for a cool, summer treat. Plan ahead and make this dough the night before you want to serve; it is crucial this dough chills in the fridge at least 4 hours or overnight otherwise the cookies will spread too much. This recipe makes approximately 24 cookies or 12 ice cream sandwiches.

Seeking to make this a reality for her kids – and all allergy folk – she developed this recipe. This should yield about 10 2×4 inch sandwiches, depending on thickness of cookie and amount of ice cream used.

French Bread
This bread takes a little more watching and tending (throwing the ice cubes in the oven every ten minutes or so makes the crust really crisp and chewy), but it's entirely worth it! A golden, chewy crust hides a soft white interior, and nothing is better for sopping up pasta sauce or dipping oil! You can make this in a cake pan (the shape will be odd), but if you really love French bread, then invest in a good French bread loaf mold (the kind without the holes).
