In college I practically lived off of Twix and Dunkin Stix from the hall vending machine, especially during crunch time for exams. It wasn’t until recently that I realized my children had literally never had a Twix before, so I decided to develop this recipe for a candy bar that would be similar. Three layers are combined chocolate, caramel, and shortbread cookie – into a delicious facsimile of the real thing. Make sure to follow the instructions carefully for best results. This recipe should make somewhere between 30 and 60 bars, depending on how you cut the bars.

My neighbor cries with glee when I share this classic dessert on summer nights. These ice cream sandwiches are a delightful departure from the norm when you swap in Mexican chocolate for regular chocolate chips. Found in the International Food aisle (or online), Mexican chocolate has a hint of cinnamon which is delicious paired with vanilla ice cream for a cool, summer treat. Plan ahead and make this dough the night before you want to serve; it is crucial this dough chills in the fridge at least 4 hours or overnight otherwise the cookies will spread too much. This recipe makes approximately 24 cookies or 12 ice cream sandwiches.

Another deep fried fair food to garner national attention, Pineapple-on-a-stick takes the concept of Pineapple Upside Down Cake and turns it inside out – literally. Delicious Yellow Cake Batter coats fresh pineapple and is then deep fried…on a stick. How something so simple can be so good, we don’t know, but it works. We found that the taste of the pinapple can be somewhat ‘lost’ in the finished product and so have made suggestions for enhancing the flavor with flavoring extract, but this is by no means necessary. Use the leftover dry Yellow Cake Mix to make Cake Batter Milkshakes, Cake Batter Krispie Treats, or other fun recipes, like one minute microwave cakes.
