Super Chewy Granola Bars (Quaker Chewy Granola Bar Clone)
If you’re a fan of chewy granola bars, and of Quaker Chewy bars in particular, this recipe tastes so much like the real thing, you may find yourself eating a ‘whole box’ in one sitting, just to get all the little chocolate chips! Sweet, chewy, and packed full of flavor – this is all the goodness of the original, without any of the barley, wheat and other gluteny stuff that makes us sick. This recipe can naturally be made vegan and gluten free – my brand recommendations are below the ingredients list.
Funnel Cakes
Nothing says PA fair season like funnel cakes! Alton Brown really deserves the credit for inspiring this recipe. I used his method and our own products (plus some aquafaba) to create fluffy, crisp fried batter, topped with powdered sugar.

Vegan, Egg-Free Royal Icing

While most recipes online call for chickpea aquafaba (also called bean juice or bean brine), those of us with peanut allergies may avoid chickpeas – I have found that any white bean aquafaba will do. If you are corn allergic or avoidant, you can use our Corn Free Powdered Sugar with perfect results.
