GF Jam Rollies
This recipe was submitted to us by one of our lovely customers! She has come up with a delicious breakfast treat, Jam Rollies. Quick and easy to make, they are sure to become a go-to breakfast for your family!
GF Jam Rollies
Ingredients
Dough:
- 1 C Better Batter Pancake Mix
- 1/4 C lite sour cream
- 2 t sugar
- 3 T plus 1 t milk
Filling:
- 2 T preserves or thick jam
- 1/4 C chopped nuts
- 1/4 C raisins
- 1/2 t cinnamon
Glaze:
- 1/4 C powdered sugar
- 1 t milk
Instructions:
Mix the dry ingredients. Add the wet and knead a bit into a ball. Put on a sheet of plastic wrap and shape into a flat rectangle. Cover with another sheet of plastic wrap and roll into a rectangle about 7″ x 14″.
Spread the preserves/jam onto the dough and sprinkle on the rest of the filling. Roll the long way. Cut into 8 pieces about 1 1/4 ” each. With the cut side up, put each section into a silicone cupcake form or into a greased muffin pan. Push down a little.
Bake at 350 for 18 minutes. When cool, mix the glaze and spoon over. These will be quite small but very nice for a light breakfast.
