Berry Muffin
Easy muffins, bright and moist, made with our yellow cake mix!

Berry Muffins-The Easy Way
Serves: 12-24 | Prep Time: 10 min | Cook Time: 25-35 min
Ingredients
- 1 package Better Batter Gluten-free Yellow Cake Mix, made as per package instructions
- 1/4 c Better Batter Flour, any blend
- 1 ½ cups fresh or frozen berries
Instructions
Preheat oven to 350F. Spray 24 muffin tins, or line with paper liners.
Follow the instructions on the box of Better Batter Gluten-free Yellow Cake Mix to make the cake muffin batter.
Toss berries with flour, and set aside.
Add berries to batter, stirring just until combined. Do not stir too much, or the batter will turn a funny color.
Spoon batter in to prepared muffin pans.
Bake about 25-35 minutes, or until the tops of the cake are golden brown. Remove from oven and place on wire rack in pans to cool for 10 minutes. Remove muffins from pans and cool completely.
