Basic Magic Muffin Mix

Are you looking for a basic muffin recipe that you can add anything to? This is an amazing recipe to have in your back pocket if you have company coming over, or even for an afternoon snack for your kids.

Basic Magic Muffin

Servings 12 muffins | Prep Time 12 min  | Cook Time 30 to 35 min

 

Ingredient

Dry Ingredients
  • 1 3/4 cup Better Batter Flour (choose one):
    • 212g Cake Flour OR
    • 240g Artisan OR
    • 177g Original
  • 1 cup (200g) sugar
  • 3 tsp (14g)  baking powder
  • ½ tsp (3g) baking soda
  • ½ tsp (3.5g) salt

 

Wet ingredients
  • 1 cup (236 ml)regular or GF milk
  • 1/2 cup (118ml) oil
  • 2 tsp (8g) vanilla
  • 2 eggs or 6 Tbsp (75ml) aquafaba
  • 1 cup add-ins - blueberries, raspberries, blackberries, chocolate chips, bananas, your choice

 

Instructions

Preheat and Prepare. Heat the oven to 425°F. Line a standard muffin tin with liners.

 

Combine Dry Ingredients. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Combine Wet Ingredients. In a separate bowl, whisk together the milk, oil, eggs, and vanilla.
 
Make Batter. Gently fold the dry mixture into the wet mixture, leaving pea sized lumps of dry mix throughout the batter. Use a rubber spatula to fold in any add-ins.

 

Bake. Once batter is ready, fill lined muffin tins evenly. Bake the muffins at 425°F for 5 minutes, then reduce the heat to 375°F and continue baking for 15 to 20 minutes or until the muffins are browned on top and a toothpick inserted into the center comes out clean.

Cool and Serve. Once finished baking, remove muffins from from oven and allow muffins to cool for 5 minutes. After 5 minutes, place them on a wire rack to cool completely, roughly 20 minutes. Enjoy!
