Pretzel Bites Using Pizza Crust Mix

Pretzel Bites Using Pizza Crust Mix
Servings: 12 | Prep Time: 15 min | Cook Time: 25 min
Ingredients:
- 1 package/recipe Better Batter pizza crust prepared as directed on package, but not baked
- 2-4 tablespoons gf flour for dusting work surface
- 1/4 cup baking soda (Reserve for boiling.)
- Topping options:
- 1 stick butter or vegan butter. melted
- Sea salt for serving
- Garlic butter topping
- 3 tablespoons garlic, chopped
- Add into the melted butter
- Cinnamon sugar option
- 1/4 cup sugar or maple sugar
- 1 tablespoon cinnamon
Instructions:
Preheat the oven to 475 degrees.
Prepare dough as directed on package through the first proofing step. Proof overnight and then proceed with the rest of the recipe.
Shaping:
Place chilled pizza dough on the counter for 90 minutes to allow it to come to room temperature.
Dust a clean work surface with gluten free flour and dump out the pizza dough.
Using a knife, divide the dough into 8 equal pieces.
Roll out each piece into a long rope until the dough is about ¾ of an inch thick all the way around. Working with one rope at a time, cut the bites into 1 inch pieces, making sure to not push down on the dough too hard.
Proofing:
Place. Once all the bites have been cut, place on lined sheet pan with parchment paper.
Spray with cooking spray then with spritz with water or brush with water.
Cover with damp towel and proof in warm place for 30 minutes or until double in size.
Boiling and Baking:
Boil the Water. Let the pretzel bites proof while you bring a large pot of water to a boil.
Add Baking Soda. Once the water has come to a boil, carefully add the baking soda. The water will bubble up and get very foamy. This is normal. If it starts to boil over, lower the heat slightly.
Boil. Working in 3-4 batches, boil the pretzel bites for 30 seconds, making sure to stir them around so they don't stick together.
Remove and Place. After 20 seconds, carefully remove the bites using a slotted spoon or a spider and rest them on a baking sheet lined with parchment paper and cooking spray.
Bake. When you have all the bites done, place the baking sheet in the oven to bake for about 20 to 25 minutes until they slightly begin to brown & are cooked in the center or a digital thermometer reads 210 degrees.
Topping:
Remove the bites from the oven and toss them in a bowl with the melted butter or optional garlic and butter. Make sure all the bites are coated in butter, then place them back on the baking sheet.
Sprinkle the bites with salt.
Place them back in the oven for another 10 to 15 minutes until they become browned.
Serve with mustard or cheese sauce and enjoy!
For Cinnamon Pretzel Bites. toss bites in butter or vegan butter as the recipe states. Continue baking for the second 10 minutes. Once the bites are finished baking, toss them in a little more butter, then in a mixture of cinnamon and sugar.
