Cheesy Zucchini Quiche
Ingredients
- 2 tablespoons olive oil
- 2 cups zucchini, diced
- 1 onion, diced
- 1 teaspoon garlic powder
- 1 teaspoon basil
- 1 teaspoon parsley, chopped
- 1/2 cup Better Batter Gluten Free Flour
- 1/2 cup milk
- 1/2 cup sour cream
- 2 eggs, beaten
- salt and pepper to taste
- 3/4 cup shredded mozzarella
- 1/4 cup shredded cheddar cheese
- 1/4 cup parmesan cheese
Instructions
Preheat oven to 350 degrees. Spray a 9 x 13-inch dish with cooking spray.
In a large saucepan, combine the olive oil, zucchini, and onion.
Cook until tender about 5-7 minutes. Remove from heat and set aside, let cool. Meanwhile in a bowl add the garlic powder, basil, parsley, gluten free flour, milk, sour cream, eggs, salt and pepper, mozzarella, cheddar cheese, and parmesan cheese.
Mix well. Add the mixture to the zucchini and stir until combined.
Bake for about 25-30 minutes or until golden brown.
