A lot of people use Jiffy Cornbread Mix in their semi-homemade family recipes. With this clone you will be able to continue your family’s tradition of serving corn pudding, corn bread, or any other great recipe without worrying about gluten! This recipe makes enough for 3 batches of cornbread mix. Make sure to split into three containers or ziploc bags before using
2 cups (8oz or 227g) Better Batter Gluten Free Flour
1 1/2 cup yellow corn meal
1/2 c plus 1 Tbsp granulated sugar
3 tablespoons baking powder
3/4 teaspoons salt
6 tablespoons vegetable shortening or oil (shortening stores better)
In your electric mixer, stir all ingredients together until finely mixed – this mix should look very homogenous. Split into three quart sized Ziploc containers and store. Use each batch anywhere an 8.5oz box of Jiffy cornbread mix is called for.
1 portion/recipe cornbread mix clone (1/3 recipe)
1 large egg, beaten
1/3-2/3 c milk or water
Preheat oven to 400 degrees. Grease muffin tins or line with liners.
Mix all ingredients together and fill muffin tins 1/2 full.
Bake for 15-20 minutes.
Makes 12 small or 6 large muffins
