GF Jiffy Cornbread Mix Clone
A lot of people use Jiffy Cornbread Mix in their semi-homemade family recipes. With this clone you will be able to continue your family’s tradition of serving corn pudding, corn bread, or any other great recipe without worrying about gluten! This recipe makes enough for 3 batches of cornbread mix, about the amount in a single 8.5oz box of mix. Make sure to split into three airtight containers or Ziploc bags before using.
GF Jiffy Cornbread Mix Clone
Serves: 4-8 | Prep Time: 5 minutes | Cook Time: 15-20 minutes
Ingredients
- 2 cups (8oz or 227g) Better Batter Gluten Free Flour
- 1 1/2 cup yellow corn meal
- 1/2 c plus 1 Tbsp granulated sugar
- 3 tablespoons baking powder
- 3/4 teaspoons salt
- 6 tablespoons vegetable shortening or oil (shortening stores better)
Instructions
Stir Ingredients. In your electric mixer, stir all ingredients together until finely mixed – this mix should look very homogenous. Split into three quart sized Ziploc containers and store. Use one bag anywhere an 8.5oz box of Jiffy cornbread mix is called for.
To use:
- 1 portion/recipe cornbread mix clone (1/3 recipe)
- 1 large egg, beaten, or 1/4 c aquafaba or flax/chia gel
- 1/3-2/3 c milk or water
Preheat oven to 400 degrees. Grease muffin tins or line with liners.
Mix all ingredients together and fill muffin tins 1/2 full.
Bake for 15-20 minutes.
