Texas Roadhouse Rolls Clone
Ingredients
Rolls:
- 3 1/2 cups (490g) Better Batter Original Blend Flour
- 1/4 cup (46g) sugar OR 1/3 cup (113g) honey
- 2 eggs or egg substitute (we like 100 g Aquafaba or chia egg substitute)
- 1 3/4 cups milk or milk substitute heated to 110°F
- 1 Tbsp (11g) Instant yeast
- 3 Tbsp melted butter or vegan butter (1 Tbsp for the batter and 2 Tbsp melted to brush on top of the finished rolls)
- 1 tsp(5g) salt
Cinnamon Honey Butter:
- 1/2 cup butter
- 1/4 cup powdered sugar or maple sugar
- 1/4 cup honey
- 1 1/2 tsp cinnamon
Instructions:
Mixing:
Dissolve milk, yeast, and sugar or honey, in the bowl of your electric stand mixer. Let stand about 5 minutes.
Add in the salt, butter, and eggs- mix well. Add half of the flour and beat on high speed until the mixture resembles a very thick batter, about 4 minutes. If desired, let rise for 30 minutes to 1 hour or until the batter/sponge is fluffy (almost doubled).
Add the rest off the flour to the bowl and beat on high speed for another 4 minutes, or until mixture resembles very sticky cookie dough.
Shaping:
Preheat oven to 475°F. Meanwhile, prepare a baking sheet with parchment paper. Add a small amount of flour to the parchment to avoid sticking.
Lightly flour a board and put the dough onto the board.
Roll the dough into a rectangle, about 1" thickness. Use any sharp object like a knife or pizza cutter to cut dough into squares, or use a 3" square biscuit cutter.
Transfer rolls to prepared baking sheet and brush the tops with milk or vegan milk and let rise until doubled in size, about 35 to 45 minutes.
Bake at 475° F for 20 to 25 minutes, until golden brown. Bake to an internal temperature of 210°F on a digital thermometer.
Brush hot rolls with melted butter or vegan butter after they come out of the oven.
Cinnamon Honey Butter:
Beat butter or vegan butter with a hand mixer until light and fluffy.
Add remaining ingredients and beat with mixer until well blended. Serve on warm rolls.
