For most people it’s the prune puree, which adds both moisture and body… but for me it’s the small amount of chocolate chips, which add a decadence to the muffins that are often missing in healthier baked goods. The best part of this recipe is how few ingredients it calls for – prunes, water, cake mix, and chocolate chips. A cinch to put together, these moist muffins last well for several days.

GF Southwest Turkey
This turkey is inspired by the flavors of the American Southwest – a richly spiced mole rub creates a lovely and unique take on the traditional Thanksgiving turkey. The filling, based on traditional tamale fillings, is savory and light and combines perfectly with the meat. springy, delicious bread! I created this bread thanks to the requests of our friends over at Facebook for a rye bread for St Patrick’s Day, and let me tell you: I am in love with this stuff. It is so tasty and delicious and would be good for a sandwich any day of the year. The best part is that it requires no rising and contains no yeast or sugar!
GF Easy Baked Alaska
March 30th is Seward’s Day in Alaska -the day the US bought Alaska from Russia, so I thought I’d make this delicious Baked Alaska to celebrate. Baked Alaska can come in a variety of flavors and forms, but I went with a classic yellow cake and Neapolitan ice cream combination. You may use any flavor you wish – the technique is the same and will work no matter your flavor cake or ice cream. I found that the secret to a really good, finished dessert is to make sure your freezer is extremely cold – the colder your cake and ice cream, the more impressive the meringue will be, nicely toasted and warm on top. Follow the directions carefully for best results.
GF Lemon Raspberry Loaf Cake
With Spring in full bloom I find myself wanting fresh flavors. Light delicate sweet cakes. This one fit perfectly! Not too tart, not too sweet, the raspberries just bursting with flavor…. wait, I got to go make another because it went fast, and I miss it already! Enjoy!
GF Three Ingredient Irish Cheddar and Beer Bread
With St Patrick’s Day just around the corner, we thought we’d try a slightly different take on traditional Soda Bread – our variation on this classic food contains just three ingredients – our amazing Better Batter Gluten Free Pancake and Biscuit Mix, Dublin Cheddar Cheese and gluten free beer. It is easily put together and bakes in a flash. You may use cooking spray for the pan, but for a really awesome treat we recommend using oil (see instructions below)
GF Crustless Spring Vegetable Quiche
I love quiche, but I don’t love the work that goes into it. This is a great, easy recipe to whip together – and it requires no rolling out of dough or other time-consuming prep, but still gives you that warm, comforting, satisfying quiche flavor. Because it doesn’t have a crust, it’s also a bit better for you in terms of calories and fat than traditional quiche. Don’t have spring vegetables? You can substitute in equal parts of any other vegetable (or swap the veg out for meat).
GF Chalupas
While the classic, traditional chalupa is a thin, fried corn tortilla (made in the shape of a small bowl), in the US we have come to know the term to describe a puffy fried ‘taco shell’ made of flour, more akin to fry-bread than anything. If you’ve never tried a ‘US chalupa’, it’s definitely worth the work – there is something texturally pleasing about the crisp, fried exterior and the pillowy center of the bread that pairs better than you can imagine with the traditional fillings of meat, cheese, and vegetables. Fill your chalupa as you wish – the chalupa in our picture was filled with pulled taco seasoned chicken, Arroz Blanco, Mexican cheese, and guacamole.

These cinnamon scones are tender, moist, and full of warm flavors perfect for serving for a special breakfast, coffee with friends, or brunch. You’d never guess they are gluten free but be sure to use the heavy cream as it plays an important part in the taste of these scones. Cinnamon chips are available seasonally in many gr0cery stores around Thanksgiving or look for them online. Store in an airtight container and they will keep fresh for 2-3 days.

The key flavor component in Earl Gray is the bergamot, so you’ll get the same delightful scent and citrusy /floral flavor, either way!
