Tiger bark shortbread, this week’s “Pinspired” recipe, is a yummy combination of peanut butter, chocolate, and shortbread cookie. The shortbread cookie is quick and easy with only 3 ingredients, and there’s no need for a mixer. The peanut butter and chocolate are melted in the microwave. Ingredients

For the shortbread:

18 ounces Better Batter gluten-free flour

6 ounces sugar

12 ounces butter

For the tiger bark topping:

2 cups white chocolate chips (one 12 ounce bag)

1 2/3 cups peanut butter chips (one 10 ounce bag)

3/4 cup creamy peanut butter

2 cups semi-sweet chocolate chips (one 12 ounce bag)

Directions

  1.  Mix flour, sugar, and butter until well combined.  You should be able to form a ball of dough.  (I start out with my pastry cutter and then use my hands to mix the dough.)
  2. Line a 9 x 13 pan with parchment paper.  (I line my baking pan with parchment so that it does not get scratched when cutting the shortbread.)
  3. Press the shortbread dough into the pan into an even layer.
  4. Bake at 350 degrees for about 15 minutes or until lightly golden brown.
  5. Allow shortbread to cool in the pan while preparing the tiger bark topping.
  6. Melt the white chocolate chips, peanut butter chips, and peanut butter in the microwave.  (Heat for 1 minute and then stir.  If necessary, continue heating and stirring in 30 second intervals until everything is melted and mixed together.)
  7. Pour the peanut butter mixture over the shortbread.
  8. Melt the semi-sweet chocolate chips.
  9. Spoon the chocolate over the peanut butter mixture.  Use a knife to swirl the chocolate into the peanut butter mixture.
  10. Let cool until the peanut butter and chocolate have hardened.  (You can put it in the freezer if you’re in a hurry.)
  11. Cut into serving pieces and enjoy!
