Slow Cooker Beef Stew

Beef stew … reminds me of cold, winter evenings spent having supper with my family. When it’s cold and rainy outside, there’s nothing better than a good, thick, hearty soup or stew. I like to leave beef stew cooking all day in my slow cooker on just such a day. I serve the stew with some roasted potatoes and cornbread cakes. Yum!

Ingredients

1 ¼ pounds beef stew meat, thawed

1 bag frozen mixed vegetables

1 quart beef stock/broth

¼ cup Better Batter Gluten-Free Flour Blend

salt, pepper, garlic powder, onion powder, dried onion, red pepper flakes, coriander, thyme (to taste)

Directions

  1. Mix Better Batter Gluten-Free Flour Blend and seasonings to taste. (I don’t measure seasonings. My husband complains all the time because nothing I cook tastes exactly the same every time!)
  2. Coat stew meat in flour and seasoning mixture.IMG_9792
  3. Add stew meat and any remaining flour mixture to your slow cooker. (I use slow cooker liners to make clean-up super easy.)
  4. Add frozen mixed vegetables to your slow cooker. (I use a mix of corn, green beans, peas, carrots, and lima beans. You can use any mixture of vegetables you like in your beef stew. I did try sweet potatoes and turnips one time, and my family almost revolted!)
  5. Add 3-4 cups of beef stock or broth to your slow cooker. (You can substitute 1 cup of gluten-free ale for 1 cup of the beef stock or broth. The ale adds another layer of flavor to the stew, similar to steak and ale pie.) Use less liquid if you like thicker stew. Use more liquid if you like thinner, more soup-like stew.
  6. Stir the contents of the slow cooker.
  7. Cook on low for 8-10 hours or until the stew meat is tender and falling apart.
  8. Serve with your favorite potatoes and warm bread. Enjoy!
