Peanut Butter Log

A creamy, fun snack idea! Use Wowbutter or Sunbutter if you have a peanut allergy & Daiya if you have a dairy allergy.

Who doesn’t love the flavor combination of chocolate and peanut butter? This is one of those quick desserts you really can pull together on short notice using pantry staples or even have waiting in the freezer in advance of a party. Makes enough for at least 10 servings.

ingredients

8 oz cream cheese or non dairy sub (we like Daiya), at room temperature

1 c Better Batter Corn-Free Powdered Sugar

3/4 c creamy peanut butter, wowbutter or sunbutter

2 Tbl brown sugar

5-6 oz miniature chocolate chips (we prefer Enjoy Life)

5-6 oz peanut butter chips, optional (skip if you have peanut allergy)

apple slices and gluten-free graham crackers for dipping

instructions

Combine cream cheese or non dairy sub, powdered sugar, peanut butter or wow/sunbutter, and brown sugar in a medium bowl. Using a handheld electric mixer, beat on low speed for 30 seconds until powdered sugar is mixed in then increase speed to medium high and blend well, scraping down the sides of the bowl as you go. Spoon the mixture out onto a sheet of plastic wrap and form a log shape about 4 inches wide and 8 inches long using the plastic wrap to maintain the shape. Twist in the ends and compress into a tight roll. Freeze for an hour to harden slightly.

Spread 5-6 oz of each chocolate chip flavor onto a plate and gently mix together, for about 12 oz total. I use about half a regular-sized bag. Remove plastic wrap and press the chips into the peanut butter log on all sides and the ends. Re-wrap in the plastic and store either in the refrigerator or the freezer until ready to use. If stored in the freezer, be sure to wrap tightly and remove 30-45 minutes before serving to thaw. To serve, slice rounds of the log and add slices apples and graham crackers.
