Cheese latkes are a great breakfast or snack that the whole family enjoys. My kids really look forward to when I make these. They can be eaten alone or with maple syrup, sour cream, icing sugar. The orange zest adds an extra something to the flavour but if you don’t have any you can add more vanilla extract.
Ingredients
1 cup cottage cheese
3 eggs
3/4 cup better batter gf flour
1/4 cup (heaping, we like everything sweeet here) sugar
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
Zest of half an orange.
1 teaspoon vanilla extract
Instructions
1. Combine all ingredients in a large mixing bowl. Blend together (yup. That’s it! This mom doesn’t have time for anything else.). You can blend with a mixer, food processor, immersion blender. Super easy!
2. Heat a skillet with oil or non stick cooking spray on medium heat.
3. Drop batter in heaping spoonfuls into the skillet in silver dollar shape. It should be about 1-2 tablespoons worth of batter per pancake. They will puff up a bunch. Fry for about 3 min on each side until golden brown. Serve immediately.
