This is a great little treat for one person, or for those moments you really want a fresh ‘baked’ treat, but really don’t want to heat up the kitchen or wait around for a half hour. You will need only two ingredients – a box of our Yellow or Chocolate Cake and either yogurt or water –  for this recipe. You will note that the yogurt will give a moister result in the finished cake.  This recipe makes one regular sized cupcake. You may double everything (including the cook time) and omit the liner in favor of a sprayed coffee mug for a larger, two minute mug cake.

You will need:

2 cupcake liners or one cupcake cup

small ramekin, custard cup or small teacup (microwave safe!)

small bowl and spoon for mixing

 

Ingredients

2 Tbsp Better Batter Gluten Free Cake Mix, Yellow or Chocolate

1 Tbsp yogurt of your choice (we recommend greek vanilla yogurt) OR 1 1/2 tbsp water

 

Line ramekin with cupcake liner(s) or cup. In small bowl mix together the dry cake mix and the yogurt or water. Your mixture will be very thick (almost like chocolate pudding or mousse!).

Spoon the mixture into the liner and place in microwave Microwave for 1 minute. Remove from microwave and allow to cool for one minute. Remove from ramekin. Top with one minute ganache, if desired (below).

 

One Minute Ganache

2 Tbsp butter or non dairy margarine

2-3 tbsp semi sweet or allergen free chocolate chips (we recommend Enjoy Life Brand)

Place in a microwave safe bowl and microwave for 30 seconds. Stir and microwave again for another 30 seconds. Stir until chocolate chips melt completely and mixture begins to thicken. Mixture will thicken in about one minute.  Spoon or pipe onto your cooled cupcake.
