Ahhh . . . pizza . . . but who wants to turn on the oven when it’s so hot outside? Not me! Tonight we made grilled pizzas! Just as yummy and the house wasn’t overheated because of the oven! Next time you’re craving pizza in the middle of summer, try a grilled pizza.

Ingredients for crust:
1 ½ cups (6 ounces) Better Batter gluten-free flour
1 cup warm milk (or substitute)
1 tablespoon rapid-rise yeast
1 tablespoon sugar
1 teaspoon onion powder
1 teaspoon Italian seasoning
1 tablespoon olive oil
½ teaspoon salt

Pizza toppings:
Pizza sauce—Use your favorite pizza sauce, or make pizza sauce by seasoning tomato sauce. I make my own pizza sauce because most jarred pizza sauces contain high fructose corn syrup, and we try to avoid it.
Italian sausage, pepperonis, Canadian bacon, etc.
Mushrooms, black olives, etc.
Mozzarella cheese
Any other toppings you want on your pizza

Instructions:
1. Heat milk in microwave for about 1 minute or until warm.
2. Mix yeast and sugar in a small bowl. Then add warm milk. Set aside for about 5 minutes.
3. Mix flour, onion powder, Italian seasoning, and salt in mixer bowl. (I use a stand mixer for any gluten-free dough.)
4. Then add olive oil to flour mixture. Mix on low for about 30 seconds.
5. Add yeast and milk mixture to flour mixture. Mix on low for about 1 minute. Scrape sides of bowl well. Mix on medium to high for 2-3 minutes or until well-mixed.
6. Spread a thin layer of dough on an oiled piece of foil. **THIN crust is a must if you are grilling the pizza. I made the mistake of having thick dough, and the middle didn’t cook all the way through, and the bottom was burned. I didn’t have enough foil, so I used my iron skillets!
7. Top with sauce and desired toppings.
8. Cook on pre-heated grill for about 10 minutes or until crust is golden brown, cheese is melted and bubbly, and toppings are heated through.
9. Allow pizza to cool slightly; then slice and enjoy!
