Next level apple dumplings! Tart apples, a syrupy center, covered in a thick and rich caramel sauce – this dessert is surprisingly easy to put together, and looks really impressive. Ingredients

Dumplings

1 1/3 c (160g) Better Batter Gluten Free Flour
1 1/2 tbsp (19g) granulated sugar
1 tsp (4g) baking powder
1/4 tsp (1.5g) salt
1/2 c (227g) butter, dairy free margarine, or shortening
1/2 c milk or df sub

Filling
4 tart apples, peeled and cored (we like Honeycrisp or Pink Lady)
3 Tbsp (12.5g) brown sugar
1/2 tsp (1.3g) ground cinnamon
3 tbsp (42.5g) butter or dairy free margarine, softened

Caramel Sauce
1 1/2 tbsp (12g) Better Batter Gluten Free Flour
1 c (237 ml or g) water or apple cider
1 c (198g) granulated sugar
1 1/3 c (265g) packed light brown sugar
8 tbsp (115g) butter or dairy free margarine
1/8 tsp (.75g) salt

Instructions

Peel and core your apples. Cut in half horizontally. Heat your oven to 350F.

In the bowl of your mixer, combine the flour, sugar, baking powder, and salt. Blend until evenly mixed. Cut in the butter or shortening until the mixture resembles fine crumbs. Add the milk or df sub and toss/mix until the blend forms a dough. Add extra liquid if needed. Set aside.

In a small bowl, blend together the brown sugar, cinnamon, and butter until a paste forms. Divide into 4 parts and set aside.

Divide dough into 4 parts – roll out into squares or circles about 1/8 inch thick (enough to cover the apples). Place an apple in the center of each portion of dough. Lift off the top of each apple and place one portion of brown sugar/cinnamon paste in each. Replace the top.

Gently fold over the pastry to cover the entire apple, pressing lightly to seal. Place in an ungreased baking dish.

Place in the oven and bake for 50-60 minutes, or until golden brown and baked through.

Meanwhile, make your sauce.

In a heavy saucepan, combine the flour, water, sugar, brown sugar, and salt called for in the sauce ingredients. Stir to combine evenly. Place on the stove and bring to a boil, stirring constantly. Allow to boil until the mixture thickens – 5-12 minutes. This will continue to thicken on cooling, so aim for a texture of thin pancake syrup in the pan. Mixture will be very hot! Set aside.

When dumplings are finished, remove from oven. Place into individual serving dishes and top with a generous amount of sauce. Serve immediately.

These are also good (reheated ) for several days after making. Reheat the dumplings and sauce separately before serving.
