Breakfast “Pizza”

This ‘sicilian style’ breakfast pizza can be easily customized with toppings to suit your taste. So easy and delicious!

The recipe for breakfast pizza came about because breakfast is my family’s favorite meal anytime of day! A few years ago, we had “breakfast night” once a week. At that time, I wasn’t very creative with my recipes, so we had a LOT of pancakes and French toast and syrup. Now when we have breakfast for supper, I try to be a little more creative sometimes to add some variety. This “breakfast pizza” is a combination of ideas from my own recipe for sausage bread and from recipe videos on Facebook. I hope you give it a try! This recipe is easily customized. Use your favorite breakfast meat and cheese. Add chopped veggies to make the egg more like an omelet. You are only limited by your imagination!

Ingredients

For the biscuit crust:

2 cups (8 ounces) Better Batter gluten-free flour

1 tablespoon baking powder

2 teaspoons sugar

¼ teaspoon salt

½ cup (1 stick) butter, margarine, or shortening

¾ cup milk (or df alternative)

 

For the optional “sauce/gravy”:

4 tablespoons butter or margarine

¼ cup Better Batter gluten-free flour

2-4 cups milk or df alternative

Seasonings to taste (salt, pepper, onion powder, garlic powder)

 

For the “toppings”:

½ pound breakfast sausage, cooked, crumbled

6 eggs, scrambled

4-6 ounces cheese or df alternative, shredded (Use your favorite!  I like cheddar or Gouda.)

Directions

  1. In a stand mixer, mix together Better Batter gluten-free flour, baking powder, sugar, cream of tartar, and salt.
  2. Mix in ½ cup butter, margarine, or shortening till mixture resembles coarse crumbs. (I cut the stick of butter into small cubes before adding it to the flour.)
  3. Add milk all at once, and mix well.
  4. Dump the dough onto a sheet of plastic wrap. Use the plastic wrap to help gently shape the dough into a “log.”  Unroll the plastic wrap and slice the dough into 8 biscuits.
  5. Place biscuits onto a greased iron skillet or parchment-lined baking pan.
  6. Bake at 400˚F for about 15 minutes.
  7. While biscuits are baking, scramble 6 eggs in a bowl. Cook sausage, and shred cheese. Make sauce/gravy if desired.

–To make gravy:  Melt butter in a medium skillet.  Add flour and whisk well.  Add seasonings.  Allow mixture to cook over medium to medium-high heat for 1-2 minutes.  Whisk in 2 cups of milk.  Add more milk as necessary if the gravy becomes too thick.  Taste and season as desired.

  1. After biscuits have baked for about 15 minutes, remove pan from oven, and pour eggs over the top of the biscuits.
  2. Continue baking at 400˚F for another 10 minutes. Remove from oven and add sauce/gravy, sausage crumbles, and cheese.  Return to oven and cook for another 10 minutes or until eggs are completely set and cheese is melted.
