WowButter Oatmeal Cookies
Warm and chewy oatmeal cookies, free of peanuts/nuts, egg, dairy, and gluten. Awesome for school parties!
For those of us with peanut allergies, these cookies are a godsend – every bit as good as their peanut butter counterparts. Appropriate for a wide variety of food allergies, these are great cookies to take with you to parties.
ingredients
- 1/2 cup Earth balance or non dairy margarine, at room temperature
- 1 cup brown sugar
- 1/4 c chia gel (use 1 tsp chia and 4 tbsp water. allow to sit for at least 5 minutes, or until the consistency of hair gel)
- 1 1/2 tsp pure vanilla extract
- 1/2 cup smooth Wowbutter
- 1 cup (4oz or 140g) Better Batter Gluten Free Flour
- 1/2 tsp baking soda
- 1 pinch kosher salt
- 1 cup gluten free old fashioned oats (we like Bob’s Red Mill)
Instructions
Preheat your oven to 350 degrees. Line two cookie sheets with parchment paper and set aside.
In the bowl of your mixer, cream the Earth Balance or non dairy margarine, brown sugar, chia gel, and Wowbutter until smooth and creamy, about two minutes.
In a separate bowl, sift together the Better Batter flour, baking soda, and salt. Add the sifted mixture to the ingredients in your mixer and blend until well combined. Stir in the oats.
Using a 1-2tbsp scoop, scoop even amounts of cookie dough onto each prepared sheet. Depending on how much dough you use, you will get between 24 and 48 cookies per recipe.
Place cookie sheets in the oven and bake for 10-14 minutes, depending on desired chewiness and the size of the cookie.
Slide the parchment paper onto a rack and allow cookies to cool completely before removing.
Repeat with remaining dough until all dough is used.
