Witchy Brownie Parfaits

How FUN are these Halloween-inspired parfaits? If you happen to have some extra gluten free brownies laying about (I mean, who really does??) then the hardest part is already done! Layer in crumbled brownies, whipped cream, and crushed sandwich cookies before topping with pudding. Both good and wicked witches will be smiling when you serve these for dessert.

Ingredients

  • Vanilla pudding mix (and the milk as called for on the back of the box), I use fat-free, sugar-free instant pudding mix and fat-free milk
  • Green food coloring
  • 1 box Better Batter Fudge Brownies, baked as directed on the back of the box, then crumbled into smaller pieces
  • 3 eggs, 1/4 c water, and 1/2 c cooking oil (I use vegetable oil) for the brownies
  • Store-bought gluten free chocolate sandwich cookies, such as K-Toos, crushed
  • Frozen whipped cream, such as TruWhip, thawed
  • Halloween sprinkles
For the witch’s legs you will need paper straws and black paper. See directions in the post to assemble the witch’s legs.

Instructions

Bake the brownies. Prepare the brownies as directed on the back of the Better Batter box using a 9×13 pan, eggs, water, and cooking oil. Bake 30-35 minutes until a toothpick inserted in the center comes out clean. Remove from oven and cool completely.

Prepare the pudding. Prepare pudding mix as directed on the back of the box or purchase ready-to-eat vanilla pudding. Once the pudding is set, use 2-4 drops of green food coloring to dye the pudding to your desired shade of green. Set aside.

Crush the cookies. Using a mini chopper or food processor, process about 1/2 package of chocolate sandwich cookies until no large pieces remain. Set aside.

Assemble the parfaits. Begin to layer the crumbed brownie pieces in the bottom of each glass. Add a layer of whipped cream on top of brownie pieces then a layer of crushed chocolate sandwich cookies. Spoon green pudding on top of the cookie layer. Top with Halloween sprinkles. Insert witch’s legs (directions below) and serve.

Make witch’s legs. Cut striped paper straws in half. Sketch a witch shoe on black paper and cut out. Repeat for additional shoes. Glue shoe cut outs onto the end of the straws before using to decorate the parfaits.
