Texas Sized Pistachio Muffins

pistachiomuffin2.jpg These ridiculously moist and flavourful muffins are absolutely the best muffins in the world and abnormally easy to make, if you keep Boxed Cake Mix on hand. Sam’s club in Pennsylvania used to make something very similar. This recipe makes 8 jumbo (Texas sized) muffins. Feel free to make smaller muffins, but adjust the cooking time accordingly.


4 cups Boxed Cake Mix


1 c Better Batter Gluten Free Flour

4 eggs, beaten

1 package instant pistachio pudding (make sure it’s GF!)

1 c sour cream

1/2 c water

1/4 c oil

1/2 c chopped almonds or pistachios

Instructions
Mix the flour, cake mix, and pudding.

In a separate bowl, or a blender, beat the sour cream, water, and oil.

Blend the wet ingredients with the dry ingredients and stir in the nuts.

Spoon into lined, texas sized muffin tins and bake at 375 for about 20 minutes or until the tops barely begin to brown.

Please note these will only be very lightly browned — pale!
