Peach Cobbler - Better Batter Gluten Free Flour

Peach Cobbler

Take advantage of seasonal produce like fresh peaches and make a simple peach cobbler your family and friends will love. No access to fresh peaches? Thaw out some frozen peaches. Double this recipe for a larger group!

Ingredients

  • 2 c fresh peaches, peeled and sliced (about 8-9 peaches)
  • 1-2+ Tbl granulated sugar, depending on the sweetness of the peaches
  • 1/2 c (1 stick) unsalted butter, softened
  • 1 c Better Batter All-Purpose Flour
  • 1 1/4 tsp baking powder
  • 1/8 tsp salt
  • 1/2 c granulated sugar
  • 1 egg
  • 1 tsp vanilla
  • Cooking spray
  • Ice cream, optional

Instructions

Preheat the prepare. Preheat the oven to 350 degrees. Lightly spray a 9×9-inch baking dish with cooking spray. Set aside.

Prepare the peach filling. Place the sliced peaches in the prepared dish and sprinkle with 1-2 Tbl sugar.

Make the cobbler topping. In a medium mixing bowl beat together the butter and sugar until fluffy with a handheld electric mixer on low. Add the flour, baking powder, and salt. Mix until incorporated. Add the egg and vanilla; beat well. Spoon the cobbler mixture over the peaches.

Bake. Bake for 20-25 minutes or until lightly golden on top. Tent with foil if browning too quickly. Remove from the oven and cool for 10 minutes. Serve warm with a scoop of vanilla ice cream. Serves 4.
