Everyone needs a great banana bread recipe in their life. How about one that is egg free, dairy free , nut-free, peanut free, and soy free; something that all your friends and family will love.
1 ¼ cups Sugar
½ cup Coconut Oil/Vegetable Oil
2 Tbs. Flax Seed Meal (steeped for 10 minutes in 6 Tbs. hot water)
1 ½ cups Bananas, mashed very ripe (3 to 4 medium)
½ cup Rice Milk
1 tsp. Vanilla
2 ½ cups (10 ounces) Better Batter Gluten-Free Flour
1 tsp. Baking Soda
1 tsp. Salt
1. Heat oven to 325°F. Grease bottoms only of 2 loaf pans, 8 ½” x 4” size.
2. Mix sugar and oil in large bowl. Stir in flax eggs until well blended. Add bananas, rice milk and vanilla. Beat until smooth.
3. Stir in flour, baking soda and salt just until moistened. Pour mixture into pans.
4. Bake 8-inch loaves for about 1 1/4 hours, or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans and place top side up on wire rack. Cool completely, about 2 hours.
