Looking for a spectacular gift idea that is easy and affordable to make for your mother on Mother’s Day or another loved one on Valentines Day? Have an anniversary coming up? Why not create this stunning, lacy cookie basket, which tastes like delicious English toffee and fill it with your loved one’s favorite treats? 10 minutes, a few ingredients, parchment paper and a cookie sheet, and a heat proof mixing bowl is all you need for a WOW dessert that can also function as a handy gift basket.
TOFFEE BASKET
1/3 c packed brown sugar
2 tbsp salted butter
1 tbsp vegetable oil
1 tbsp vanilla or liquor of choice
1/3 c Better Batter Gluten Free Flour

Preheat oven to 350 degrees. Line a cookie sheet with parchment paper and set aside a glass or other heatproof bowl to form your basket on.

Combine brown sugar, butter, and oil and place in a microwave safe bowl. Microwave on high for 1 minute, stirring well half way through, until mixture is bubbling and smooth. Stir in flour and vanilla and stir until the mixture thickens and is well combined.

Spread the mixture onto the parchment paper, into a circle at least 12 inches across and up to 15 inches (the thinner you make it, the less sturdy it will be).

Place the cookie sheet in the oven and cook for 5 minutes. Turn the pan 180 degrees and cook another 4-5 minutes. You will want to keep an eye on this very carefully – at first the mixture will bubble up, and then it will collapse – it is after the bubbles collapse and before the outer edges burn that you will want to remove the cookie.

Allow the cookie to rest for one minute after removing from the oven. Working quickly, drape the parchment paper side of the cookie over the mixing bowl, crimping the paper to create the shape you wish. This should drape rather easily for you. Allow to cool completely and to drain (extra butter and oil will drip off the sheet as it cools).

Meanwhile prepare whatever treats you plan to put into the basket – we covered 2 quarts of strawberries with melted dark and white chocolate and dipped them in white dragees and chocolate sprinkles – Assemble the basket carefully and present to your loved one(s).

Note: this will soften in humid weather and if left out will absorb all moisture in the air, so this is best made on a dry day or in a controlled environment (like an air conditioned home) and served the day it is made. The basket is relatively sturdy – ours held 2 full quarts of strawberries – but you will find that if one part cracks or shatters, the whole basket will tend to do so, so be careful when transporting it!!
