Both St. Patrick’s Day and Purim are almost upon us – and both have a tradition of having a traditional tipple. St Patrick’s Day celebrates the conversion of Ireland to Christianity by St Patrick, and Purim celebrates the salvation from genocide of the Jews during the Persian empire by Queen Esther. There is a saying during Purim that, “ A person is obligated to drink on Purim until he does not know the difference between “cursed be Haman” [editor: the bad guy in the story] and “blessed be Mordechai” [editor: the uncle of the heroine and a hero]” To celebrate both holidays we’ve created these brownies. To make them family friendly, you can omit the drunken glaze. You may feel free to substitute any alcohol for the whiskey, if you wish.

Ingredients

Brownies
1 box (20oz) Better Batter Gluten Free Fudge Brownie Mix
3 eggs
1/2 c gluten free Irish Whiskey (we used Jameson, confirm yours is gluten free!)
1/4 c oil
1 recipe Drunken Glaze (below)

Drunken Glaze
12 oz semi sweet chocolate chips
1/2 c butter or margarine
1 c sugar
1 c milk or non dairy substitute
1/4 c Irish Whiskey (we used Jameson, confirm yours is gluten free!)
1/8 tsp salt

Directions

Brownies:

Preheat oven to 350 degrees and line an 8 or 9 inch square pan with parchment paper, leaving a 2 inch strip on all sides to act as a ‘handle’.

Mix all ingredients until smooth and well combined, about 50 strokes, then pour the batter into the prepared pan.

Bake for 34-42 minutes or until the outer 1 inch is well set and the top is set. Center may still be slightly jiggly. Don’t leave in too long or brownies will be tough/hard when they cool.

Allow to cool completely, then gently remove brownies from pan. Cut into squares with a very sharp knife or cake wire.

To Serve: pour a little Drunken Glaze over each brownie and serve immediately.

 

Drunken Glaze:

In a saucepan, melt chocolate chips and butter or margarine with sugar and milk (or non dairy sub), stirring over low heat until the sugar is dissolved and the chips are fully melted, about 3 to 5 minutes. Mixture should be shiny and thick. Remove from heat and stir in whiskey and salt, stir well until completely combined. Best used while slightly warm.

Mixture will thicken on cooling, you may reheat in a microwave at 15-30 second increments to thin out again.
