Better Batter Quick and Easy Coffee Cake

8” microwave safe casserole dish, greased
1 ½ C. Better Batter Gluten Free Pancake and Biscuit Mix
¼ tsp cinnamon (optional)
1/8 tsp nutmeg (optional)
¼ C. white sugar
½ C. water, non-dairy milk substitute, or milk
2 Tbsp oil
1 egg OR ¼ C. oil

Streusal
1/3 C. Better Batter Gluten Free Pancake and Biscuit Mix
1/3 C. brown sugar (packed)
2 Tbsp dairy free margarine or butter
1 tsp cinnamon
½ C. berries, jam, chopped nuts, chocolate chips, etc. (optional)

In a large mixing bowl, stir together 1 ½ cups biscuit mix, white sugar, and spices (if desired). In a separate bowl, mix ½ cup water, non-dairy sub or milk and oil (or combination of egg and oil), stirring well to combine. Add dry mix to wet mix, beating by hand until blended. Pour into greased 8-inch round dish.

Blend 1/3 cup biscuit mix, brown sugar, margarine or butter, and cinnamon until crumbly. Top batter with optional fruit, berries, etc. if desired. Sprinkle streusal over surface, and microwave on HIGH for 5-7 minutes. Most 1000 watt microwaves will take 6 minutes. Let cool 5 minutes and serve warm.
