Heart-Healthy Flaxseed Bread

This bread is a fantastic way to get heart-healthy omega-3s into your diet (or your kids' diet) without having to choke down pills or oils. The omega-3s survive the baking process intact and lend a nutty warmth to the bread. Sprinkle the top with flaxseeds or sesame seeds, for a wholesome and pleasing texture.


1 packet active dry yeast


1 T sugar


2 3/4c warm water


3 tablespoons honey


1 tbsp olive oil


1/2 tsp salt


1/2 c ground golden flaxseed


1/2 c whole flaxseed (golden or dark, or a mixture of both)


2 c Better Batter All Purpose Flour


3/4 c teff flour


1/4 c sorghum flour


 


Instructions


Preheat oven to 375 degrees. Grease an 8x4 inch loaf pan.


In a small bowl, combine yeast, sugar and warm water. Let sit for about 5 minutes, or until foamy.


In the bowl of your mixer, combine salt, honey, oil, and water. Add yeast mixture.


Add flaxseed and flours and beat on high speed for 3 minutes.


Spoon into greased loaf pan and let rise until almost doubled (about 30 minutes).


Bake for 35-55 minutes, or until loaf is very golden brown.


Turn onto a rack to cool completely. Loaf should sound hollow when you tap the crust.
