painauchocolat.jpg This breakfast pastry is a bit tricky and time consuming to make, but entirely worth the effort if you're looking for the blistery, bubbly croissants served everywhere in French and French-styled bakeries. Filled with just enough really good semisweet chocolate, these make fantastic coffee break snacks.

kaiserroll.jpg This recipe produces very nice Italian sandwich rolls, of the kind you'd use to make traditional hoagies (grinders, sub sandwiches). A crisp, chewy crust and soft interior are perfect foils for meat or  cheese, and hold up nicely to any filling. You can also serve these with a schmear of butter, for a great tea break.

These buns are called Kaiser rolls, when topped with sesame seeds or poppy seeds

This recipe makes about a six really large rolls, or a dozen smaller ones.

To get a perfect bun shape, you'll want to buy what is called a muffin-top pan to make these, which will run you about 15 dollars online. You can also used greased cookie sheets.

Flour tortillas are versatile and easy to make, if you have a griddle or a non-stick pan. Use them as the basis for many Mexican dishes or to create easy bread wraps. The secret to keeping these pliable is the increased fat content and the brief cooking time. These are best eaten and most pliable the day they are made, but you can refresh them in a microwave in a pinch.

This bread is very sweet and tastes a lot like the Hawaiian bread sold in grocery stores around the United States. Pineapple juice and ginger give it its distinctive taste.

Hawaiian bread is characteristically soft and sweet - great for sandwiches, bread pudding, or anything else that might require a softer loaf. This loaf was developed for a friend who loved Hawaiian bread but had an allergy to pineapple, once of the traditional ingredients.

Who needs Thomas? These english muffins will pass with the pickiest glutenoid, and they're full of nooks and crannies, just like the real thing. Serve them toasted and dripping with butter for a real breakfast treat. Baking soda is the secret to the exact taste of a Thomas's English Muffin. These muffins are thinner, for a clone of the store-bought kind, but you can feel free to make them a bit thicker for a decadent treat.

brioche.jpgThis bread is wonderfully soft, and it keeps longer than the typical gf bread, because of the generous amount of lecithin supplied by 6 eggs. This is a real bonus for those of us who don't like to bake as often. It also makes utterly divine French toast.

Don't be intimidated or put off by the amount of salt called for in the recipe. This bread isn't salty at all, but the salt helps the texture and keeping quality of the bread immensely.

This bread is a fantastic way to get heart-healthy omega-3s into your diet (or your kids' diet) without having to choke down pills or oils. The omega-3s survive the baking process intact and lend a nutty warmth to the bread. Sprinkle the top with flaxseeds or sesame seeds, for a wholesome and pleasing texture.

This is a sweet, easy to make variation of the Faux Wheat Bread. It keeps a little longer than the other recipe, but it is much simpler. If you make bread every day anyway, it is a good option. Dont be shocked at the amount of salt in the recipe -- it really does call for the amount listed.

fauxwheat-1.jpg There are many people who, for health reasons or for preference sake, would prefer to have something a bit more whole grain in their diet, especially when it comes to sandwich bread.
This recipe, which incorporates teff and sorghum flour into our regular Better Batter Gluten Free Flour, meets that need and replicates the taste and texture of a really soft wheat bread.

frenchbread-1.jpg This bread takes a little more watching and tending (throwing the ice cubes in the oven every ten minutes or so makes the crust really crisp and chewy), but it's entirely worth it!

A golden, chewy crust hides a soft white interior, and nothing is better for sopping up pasta sauce or dipping oil! You can make this in a cake pan (the shape will be odd), but if you really love French bread, then invest in a good French bread loaf mold (the kind without the holes). It will run you about 20.00 on Ebay, and it's worth every penny.

This recipe makes 1 large baguette. You'll want to double it for two.

basicwhitebread.jpgThis recipe was inspired by one I found in a Southern cookbook. The people of the South have an inimitable way of baking their bread so that it is floatingly light, without losing any richness and moisture. Perhaps it has something to do with all of the shortening and dairy in a typical southern-style bread recipe. In any case, this recipe is great for someone who wants a simple, sweet white bread to serve at dinner.

butteredcrust.jpgThis recipe makes a very nice, plain white bread, similar to the types of white bread you used to be able to buy in the past at your local neighborhood bakery. The loaf has a nice buttery flavor, thanks in part to the generous dribble of real dairy butter that is placed over the bread batter at the last minute.
