Basic Light Roux

lightroux.jpgThis is a classic thickener for light soups and poultry or vegetable gravies. Make a large batch and keep it in the fridge, for convenience.


1 lb Butter
3 c Better Batter Gluten Free Flour

Instructions:


Melt the butter over medium heat in a heavy saucepan. Add the flour slowly (about 1 c at a time), stirring constantly, until the mixture is smooth. Continue to cook for 5 minutes, stirring continuously, or until a light golden blond color is achieved.


Allow to cool and transfer to an airtight container. Store in the fridge for up to three weeks.

To use: reheat in the microwave or a small saucepan before adding to hot liquid.
