According to legend, Cincinnati Chili was created by a Middle-Eastern immigrant who combined his favourite spices with meat sauce, put the conglomeration on top of pasta, added traditional 'chili' accompaniments, and marketed it well.

Whatever the truth of the matter, Cincinnati Chili is a unique and fabulously delicious meal - a filling combination of sweet and savoury with a tiny 'kick' of spice. Real 5 alarm chili is made with a copious amount of ground beef, which is cooked in the highly spiced tomato sauce, producing a thick, very fine texture.

This recipe uses an eggplant/walnut combination, instead of the traditional ground beef.

 FYI: The 'alarms' in a 5 alarm chili are the following add ins.

Naomi developed this rye bread clone for her grandparents, who love rye bread, and aren't celiacs, when they moved to our town. It's quick, easy, and great for those with yeast intolerances. This bread has a great, firm texture, and it makes amazing toast or sandwiches. The combination of cocoa and caraway is what gives this bread its convincing flavor. A healthy dose of eggs gives it great rise and texture. There aren't enough caraway seeds to cause too many texture problems, but you can steep them in 1/4 c boiling water, and then strain them out, if you prefer. Let the water cool and add to the dough (be sure to increase the flour by 1/4 cup).

frenchtoast.jpgThis bread is wonderfully soft, with the additional bonus of staying a bit moister on the counter. This is a real bonus for those of us who don=t like to bake as often. It also makes utterly divine French toast, perhaps because of the extra egg yolks in it. Because it is so good, and keeps so well, I've written this recipe for two large (9 inch) loaves. Feel free to cut the ingredients in half, in order to make a single loaf. Don=t be intimidated by the amount of salt called for in the recipe B this bread isn't salty at all, but the salt helps the texture and keeping quality of the bread immensely.

amishbread.jpgAny of our bread recipes can be converted for a breadmaker, as well as being used in breadmaker recipes that you'll find online.  Below you'll find instructions for making a bread machine loaf. We've also included a simple bread machine recipe here for you.

Here are the methods we recommend for owners of breadmakers:

  • To convert a traditional gf bread machine recipe to a Better Batter recipe: Use the gf bread recipes in your bread machine manual but substitute the volume of all of the flours and the xanthan gum and any extenders (like gelatin) for our flour.  For example: for a recipe calling for 1 c of rice flour  + 1 1/2 c tapioca starch +2 1/2 tsp of xanthan gum, you'd use  2 1/2 c +2 1/2 tsp of Better Batter Flour. Continue to follow the recipe in the manual.
  • A simple method for making bread machine bread:  Go online and download a regular bread machine recipe, or use the one in your manual. Double only the liquid called for. Leave all the other ingredients the same.  Set the machine to the GF setting and Bake.
  • Converting our site recipes to the bread machine: Use our regular bread recipes on the site, using the ingredients, as written, putting them into your machine in the order the manufacturer suggests (wet then dry ingredients,  or dry then wet). Don't forget to use the GF setting!

After my son had turkey breakfast sausage at a restaurant in New York, he begged and begged me to make sausage for breakfast. In vain I searched for a turkey or beef sausage - we don't eat pork - but I couldn't find one in any of our local stores, so I decided to make my own.

This tastes so close to the Jimmy Dean sausage that my husband, who has always gotten sick from sausage's high fat content, was worried! The addition of flour makes the lean beef very easy to work with, and it keeps the sausage moist.

This recipe makes 16 patties or 32 links and freezes beautifully.

This pizza was made famous by the California Pizza kitchen. There are a lot of variations available on the web, but most of them are a little overpowering on the bbq end. You'll find this pizza a subtle improvement over the original and a huge improvement over the imitators.

Note: the crust called for here will make one regular 12 inch pizza or 2 extra thin 12 inch pizzas. We like it best extra thin, but if you choose to make a single pizza, cut the topping amounts in half.

Many thanks to Sande Guetthoff for inspiring this recipe. These taste almost exactly like the rolls you can get from the Sheetz Corporation. Slightly salty, buttery, sweet, and chewy - these make the best lunchmeat sandwiches and breakfast-wiches in the world.
